1/3 cup fresh lemon juice
2/3 cup extra-virgin olive oil
1 teaspoon gluten-free Dijon mustard
1/2 teaspoon minced shallot
sea salt and black pepper to taste
1/2 teaspoon minced fresh cilantro or basil (optional)
Combine all the ingredients in a resealable glass jar and shake well to combine.
Label and store in the refrigerator for up to a month.
