Just like Mom used to make, only healthier!
- 2 lbs. extra-lean ground beef
- 2 red onions, finely chopped
- 4 garlic cloves, minced
- 1/2 red pepper, chopped
- 1/2 c. fresh cilantro, chopped
- 1/2 c. fresh parsley, chopped
- 2 tsp. cumin
- 1 tsp. pepper
- 3 omega 3-enriched eggs, beaten
- 2 T. flaxseed oil
Mix all ingredients in a large mixing bowl. Spread mixture evenly in an 8 1/2 x 11 baking dish. Bake at 400 degrees for 45 min. or until well cooked. Serves 8.
