Gorgonzola-Walnut Potatoes

Other Time: 20 minutes
Yield: Makes 6 servings
2 pounds Yukon gold potatoes
2/3 cup crumbled Gorgonzola cheese
1/2 cup half-and-half
1/4 cup butter
1/4 cup chopped fresh parsley
3/4 teaspoon freshly ground pepper
1/4 teaspoon salt
1/2 cup chopped toasted walnuts
Quarter potatoes; boil in salted water to cover 20 minutes or until tender. Drain potatoes, and coarsely mash with Gorgonzola cheese, half-and-half, butter, chopped fresh parsley, freshly ground pepper, and salt. Sprinkle with chopped toasted walnuts.
